Original Finishing Sauce
So named because it was the first sauce I ever created!
This spicy BBQ-type sauce starts off sweet and then finishes with just a
little bite. I use only red, ripened Jalapenos that I've grown myself
preferring their maturity of flavor over that of green. These are then
combined with tomato paste, brown sugar, and spices for a little 'kick' at
the end of a sweet start.
This finds regular use among folks as a mopping sauce, pizza topping, on
french fries, and anywhere ketchup is used. At the firehouses in
Indianapolis it is used in Italian cooking, BBQ'ing, grilling, and as a
marinade!

My best selling spicy BBQ-type sauce. Not nearly as sweet as my Original
Finishing Sauce, it has a rich flavor with just a hint of smokey heat from
top shelf chipotle chiles.
It has received raves all the way from South Africa to Australia and from
Canada to Jamaica. Park Kerr of Old El Paso fame gave it a glowing review in
"On the Grill" Magazine!
Brush it on the back of a grilled cheese sandwich, pour it on french fries,
use it to make a killer meatloaf or rack of ribs, use it to dip cheeses and
meats, and by all means try it on chicken or potatoes!

This very spicy BBQ style sauce features the famous Red Savina� Habanero,
which I grow under license from GNS Spice. Some of these chiles I smoke dry
first over an apple wood fire before combining with tomato paste and several
other spices.
Like the other two before it, this one has hundreds of uses... in moderation.
For you visitors that have come to Indianapolis for the Fire Department
Instructors Conference, this is the same sauce that Local 416 sells as
the"Hot Time In Indy", in a bottle twice the size.

"Several factors have conspired that force me to pull this sauce from
availability. One is the extreme cost of the high quality imported German
glass I use to bottle this sauce. The second is the very weak US Dollar
which has caused the glass, not to mention transportation costs in
getting it here, to be even more expensive. The third is the large capital
outlay it would take to get a minimum order of glass headed this way. I
do not intend to discontinue this sauce, but don't see it being available
for quite some time. Trust me- I dislike that prospect more than you do!"

It'll blow you away. An extract based sauce that truly lacks that 'extract'
flavor. I've combined over 20 different herbs and spices along with some of
my aged habanero/whiskey mash to give it a truly unique flavor with
outstanding heat.
This item is more along the lines of an additive than a
hot sauce.

Don't confuse it with that another weak

This sauce is starting to get some notice, and with that notice has come
more than a few awards. Most recently it took a 2nd at the Zest Fest in
California 2005.
Part of what makes it so unique is that I use an old world,
barrel conditioned hard (fermented) apple cider for the base of the sauce
instead of vinegar. This gives the sauce a very distinctive and pronounced
'apple note' that is unique among marketed hot sauces.
The chile that powers this medium hot sauce is Chipotle so you know it's not
terribly hot. Works great as a sweet marinade.

A garlic lovers' dream, as I'm a garlic fanatic! My Rookie Orientation
